Your polymoog was broken.
When you hit the pitch button, it doesn't put the unit out of tune normally.
The interval setting is to set the highest pitch the pedal hits.
When all the way down, or the button off, it's at standard pitch.
Tony Banks used the effect in one song (Snowbound, if I recall) on
And Then there were Three.

"I have never understood why anybody would want to use this feature
since it only serves to knock the whole thing out of tune. Simply
engaging the PITCH button on the Polypedal shifts the Polymoog so far
off key that the front panel TUNE control can't even bring it back.
Meanwhile, the Polymoog has an input for controlling modulation
depth, which is much more useful, IMHO"
