I've done a bit of work with optoelectronic sensors for my ww-type controllers.

 From my experience, I would say that you need to think more about how your 
sensor would be used in practice.  Do you want to use it for pitch 
bend?  Then you need to ensure that the zero-displacement position gives 
you an exact and stable zero-volt output.  You probably will not be happy 
with the results if you merely use an offset circuit with a trimmer to set 
the zero.
