Could be done a similar way to the Ensoniq approach. Do a 
whatever-frequency conversion and then determine the default value for 
each key. Should work, if all keys at least have (somewhat) identical 
responses.

Now for the DIY approach: Would it be possible to convert an average 
keyboard using one of these methods, or better: has someone done it yet?

I have several spare keyboards which just deliver velocity but don't 
have any means of getting pressure response.
