I have one comparison case that did apparently make a difference. The MC3403
sounded better in a phaser than the TL074. I guess it is a circuit
configuration issue. The design originally used the 4136 (excuse me if I got
that wrong), and the 3403 was listed as a more compatible replacement.
By and large, a lot of op-amps can be swapped with no comparable difference,
UNLESS the circuit exploits a particular "feature" of the op-amp originally
chosen.
