You just need to store tables of values mapping 12 equal to just intonation.
The quantizer part is simple A/D - memory - D/A lookup, preferably with
14-16 bit resolution.  The user interface to program these tables is more
challenging.  A MIDI dump from a computer may be easiest, otherwise for a
self contained solution 5 digit display showing cents or hertz is necessary.
