I happend to have several reasons to care and need to understand noise.

One book I do recommend is the "Low-Noise Electronic System Design" by
C. D. Motchenbacher and J. A. Connelly. This is my main reference on noise and
noise processes in general, and when I wanted to remind myself about what
popcorn noise is (or any other type of noise for that matter) I consult this
book. This book is often referenced by other good literature, which is a good
indication.

In addition, there are some good texts about phase noise from NIST, which have
loads of information on the net if you care to look around in the right corners
of their website. In one of the NIST publications on a low-noise amplifier they
refered to an earlier book of Motchenbacher and Connelly.
