I've successfully used 5V switchers with my modular.  As you
surmise, the 5V supply is generally used in modular circuitry
to drive digital logic or other noise-making components like LEDs,
so in this case a little noise from the supply doesn't hurt anything.
I can't swear that you will never have a problem with it, but I haven't
run into any problems so far.

Also, you are unlikely to be able to re-use the transformer
in a linear... it's sized for the switching clock rate of the
supply, which is quite a bit higher than line frequency.
