[sdiy] newbie wiring question

Hi everyone, long time listener, first time caller.
I'm building Ray Wilsons Soundlab synth and just about to connect the circuit board up to the front panel.  My question is this: what kind of cable should I be using? 
I was gonna use a load of single core wire I have but should it be multiple stranded wire for extra flexibility (considering I'm gonna be taking it apart a lot)?  What about multi core alarm cables?  I could group wires together then and hopefully make it a bit tidier, but would the thin wires handle the current?  Or should I be using sheilded cable?
So many questions, I hope someone doesn't mind setting me straight.  I promise to learn more so that I can pick your brains better in future...
