If 12bit resolution is enough, one of the cheaper microcontrollers that
sport both ADC and DAC should be the appropriate solution. For instance
a TI MSP430F15x would be sufficient, once the DMA is set up and some
other things initialized it should even function well as an infinite
S&H without the CPU running. If you need more channels, just multiplex
the ouput to a few not-quite-infinite analog S&H amplifiers and refresh
these periodically.
