That would work, but unfortunately, the S&H is not part of the 
quantizer (it's part of a ribbon controller), I was just using that 
as an example. If I patch the S&H output directly into a VCO 
frequency input, bypassing the quantizer, the droop is even more 
noticeable as the sequence drifts flatter and flatter. I think I'm 
going to have to bite the bullet and go with the ADC/DAC route.
