Schematics of an analog pitch shifter are at Mark Hammer's site:

The schematics are useful to get to understand how a pitch shifter
works. However, it looks too complicated to build for the quality.
Obviously, almost all the comercially-available pitch shifters are
digital including all the Boss products. To learn more about pitch
shifters, I'd suggest to read an AES paper by an E-mu engineer (or
founder?).
