Analogue recording will be grim. At best it will be midfi and rather fuzzy. 
At worst you'll get squeaks and blips breaking through from the rest of the 
PC.

S/P DIF with external converters shouldn't be too bad - certainly usable 
for stereo editing. With a 2000 Sempron you should be able to do 8 
simultaneous tracks with no problem, and possibly 12-16 with a good fast 
disk.
