I thought a bit more about the idea of implementing the signal bending
(wrap-around) in the digital domain via AD/DA (which seems so
"graspable" for a programmer like me! hehe).

Wouldn't this undo the benefits of doing PM in analog? After all, PM
works great in the digital domain, but what attracts me to an analog
implementation is the "infinite samplerate and bit resolution" etc,
that would eliminate all aliasing. If I'm doing the folding via an
A/D, couldn't I just as well do it all in dsp and spend the time
making a nice interface? (or just get a DX-200)
