[sdiy] Disadvantages of using higher value pots for level control?

Two disadvantages...
1) its likely the load you are driving will be less than 1 megohm and
that
will screw up the linearity of the pots (maybe bad, maybe good)
2) 1M is a rather high value unless the load is real high impedance,
might
add some noise
Try it, no harm done. Just don't solder in all fifty of them until
you're happy
with the first one
