You can only select one channel at a time with the 4051, so that is no 
problem, and when no channel is selected...well, all the switches are just 
open.  An example of using the 4051 as a demux can be seen in a lot of 
Midi->CV converter circuits.  The common terminal is driven by a DAC, and 
the 8 separate terminals will have sample/hold capacitors with a voltage 
follower.  Look at the circuit for the Paia Midi->CV converter and you will 
see how they did it.
