A simple piezo to go 'beep' or a blinky light goes a long way in improving
the human interface aspect of a touch screen. You can also do what
ARP/Fender did on the Chroma: add a little solenoid under the panel that
goes 'thonk' whenever you press a key. I always thought that was rather
clever, although I've never actually used a Chroma so I can't say how
effective it is.
