The point about using tightly spec'ed opamps is that you don't need 
trimmers per pitch CV (just a single pair of scale + offset trimmers 
right after the DAC stage).  But I agree with you, it very much depends 
on how much precision you have throughout the rest of the system whether 
or not it's worth using premium components.  As I said, with a PAIA MIDI 
to CV converter there really isn't any point using anything special.
