Whoahahaha! :) 
Unfortunately you can only do state
variable filters with the SSM2164! ;)

Give them basic design theory backrounds,
nothing special,just like:

1:cap around a inverting Opamp creates a integrator.
2:place a switch over cap,creates a resettable integrator.
3: etc.

Then just start designing the stuff!

Yeeees why not, let them break the design into parts
then build it up again and explain the functioning
during the course.

Ahhh, but why dont you design the modules
your self or with some aid, the web is full 
of them and i think its a good exercsise to
do so instead of buying pre made stuff!
