Audibly... none
Electrically... the IN400x series is a much more powerful diode.
A capacitor, when it is fully discharged... looks like a short circuit.
The 1N400x diode can carry more current, so it is a better choice
unless there is some other means of limiting the maximum current
to a safe value.
Check the applied voltage to the timing cap... and then see how much
current
would flow in any series resistance (assume the pots are zero ohms).
If the current is small enough, the 1N4148 is OK. If not, 1N400x
