If one wanted to build a clone of the waveshaper from the Buchla 259, and
one didn't want to pay $2 for the CA3160's on e-bay, what would be a good
replacement?

As far as how that circuit works, one of the key phrases from the
datasheet seems to be:

"A complementary symmetry MOS (CMOS) transistor-pair, capable of swinging
the output voltage to within 10mV of either supply voltage terminal (at
very high values of load impedance), is employed as the output circuit."
