For general purpose stuff the 'deer nuts' 24mm Alpha pots sold by Mouser 
are great bang for the 'buck'. :-)
I use them a lot, and love the feel of them.
I'll use the Bourns cermet and/or wirewound 10-turn types for areas 
where precision/stability are needed (such as setting control voltages 
for VCOs).
For something that will take abuse, I like those surplus Allen-Bradley 
Type Js.
