Assuming the display you get has a 44780 compatible display driver chip, the 
link PaulS sent you shoudl answer all of your questions.
If you want to start playing around with graphics rather than text, then its 
a whole different ball game, there are 3 or 4 'main' types of controller, 
all with their own differences.
Its important that you get a datasheet with the display if its a graphic 
one, or at least be certain you can get one from the manufacturer!
