[sdiy] Display recommendations

For years I've avoided designing with displays.  But after getting into 
pic programming I'd like to work up a slick control interface for some 
of the ideas I've had when I build my first monster analog thang 
for..which I have a couple never before seen that I know of ideas which 
ought to just be funner than a rapid fire water baloon launcher on 
stage.   :-)
     Anyway I see places like All electronics with lots of cheap surplus 
displays and I have a few here also and I'm wondering how easy it is to 
get them working in an application since you can rarely find anything on 
the net for them and they often have no documentation.  Anyone have some 
good hints or references to ones that are cheap and have documentation?
