There are several flavors of PIC that are USB enabled. A list can be found here:

It probably wouldn't be terribly difficult to implement a stand-alone
USB->CV box using one of those. For my senior design project at school
I created a MIDI->CV box using pretty much a PIC 16f877a, a DAC and
some op-amps, so If you want something simple a PIC maybe the way to
go.
