What about writing a MIDI driver for the host computer, not as usually talking
to a MIDI interface, but instead making the USB device look like a bunch
of MIDI ports/channels/controllers?

Not that I already did something like that, but I think e.g. under
Windows it isn't prohibitively complicated.

Similarly, a VST2 plugin could be created, that is talking to the USB
device, while at the same time being visible and usable for Cubase,
Logic et.al. just like any other plugin.
