AHA!!! I found it!
I noticed that the data sheet in Greg's first link had the rather cryptic
note "for three way switch wiring, refer to Section N." Okay, where the heck
is Section N? Well, after some hunting around on the ITT Cannon web site, I
found the PDF of their full line switch catalog, and low and behold, almost
at the very end, was the elusive Section N. Here's a link:

As always, watch out if that link word wraps.
You need to go to the bottom of the very last page of Section N, and you'll
see a handy little diagram. It shows that if you add a jumper between pins 3
and 5, you now have a SP3T switch with the following sequence (forgive the
ACSII switch diagram, but I think you get the idea):

5-- 2
4 1
Position 1 = 2 connects to 1
Position 2 = 2 connects to 4
Position 3 = 2 connects to 6
As a reminder, the keyway on the switch threads is used as a reference to
show which position is where on the switch. This setup is exactly what I was
looking for, although some of you might need both sets of poles, in which
case you'll need a different switch.
