as someone who has only recently gotten into home building, my list would be
a little different. i'd see it more as 'inspirational ic's'..

in no particular order:

MOS6581 (The commodore SID)
TMS 5220 (the mighty TI speak & spell speech chip)
Motorola 68000 (where would midi recording be without the atari st..)
Z80 (the ZX Spectrum..)
8080 (the beginning..)
