I've never tried it, don't know how well it works, etc., but here's another alternative for a MIDI->CV converter in kit form, Midwest Analog's MTS-100:

It uses an eight bit DAC, which wouldn't be everyone's cup'o'tea for resolution, but my non-midi CV/Gate/Trigger keyboard uses an eight bit DAC (the same one), and I'm happy with it.
If anything, the schematics and source code for it are linked on the page as well, which may make it handy for study.
BTW, has anyone used this one before?
