Boy, now you have opened a can of worms....:-)
I personally have had very good luck with many different DACs. Each dac
has different strengths.
One I have used is the MC1408. This is a very old design, and there are
several different part numbers you can get it by (I don't remember what the
others are). When you are just producing voltages for keyboard notes, you
really only need six bits (this will produce about 5 octaves, or 64
notes). I have never noticed any accuracy problems doing this.
Another DAC I have used (and am currently using) is the AD7548JN, which is
a 12 bit DAC. This part can be a bit more difficult to find, as most
places want to sell it in 100's. It is also a little more tricky to use.
Personally I would say start out with the MC1408 and see what it will do.
