I'm not sure about the smaller motor part, but a smaller rotating disc
should help. I would also think that motors with more torque would also
give less portamento, because they could resist the flywheel effect of the
disc better.
It might also be important to consider which has more inertia, the motor or
the disc you are spinning with it?

I'm not sure what the problem is. To get a vertical edge in the resulting
waveform, wouldn't you simply cut the edge of the disk from it's outer
edge, straight towards it center? Instead of thinking of beveled gear
teeth, or sinusoid curved teeth, think more along the lines of actual saw
teeth. Heck, just flatten the "staggered" edges of an old circular saw
blade, and you should literally have a saw tooth generator. :)
I can also imagine someone precariously operating a circular saw near a
guitar pickup at this moment. - Please don't do that! :)
