If you want to do that, why don't you simply rework a textbook sample 
and hold circuit? Add a pot that the storage caps always leaks into the 
direction of the input signal (for a crude quality control). Also make 
the sample-rate adjustable.

It depends on the circuit used, but some of them start to do really 
funky things if you clock them with something else but a square wave.

You'll get a nice, controllable aliasing lofi sound that way.
