At least in the case of the organ, that's being a bit harsh, don't you think?

Depending on the particular organ, you can alter the envelope, timbre,
tuning (including microtonal on some new electronic organs), tremolo,
vibrato, reverberation, volume range, even the location and number of
speakers/pipes that are playing. I would consider that a fairly significant
range of sonic possibilities.
