Not only do many organs have a 'big juicy organ' button (typically 
called 'Tutti', for 'all'), many have a pedal that appears to be a 
standard swell pedal but that adds stops with increasing depression of 
the pedal, removing them as the pedal is pulled back.  Opinions 
differed wildly on the musicality of this, but particularly where the 
crescendo pedal is programmable, it added value.  Even required for 
some late 19th century and later organ music.
