for non critical apps, yes.

5.1V zener is near the magic 'zero temp coefficient' point...  If it is a precision
reference
the series combination of lower voltage zeners won't work.

If the sharpness of the zener 'knee' is not an issue... a couple of LEDs can be a zener as
well.
