I'm lucky 'cause I own a guitar with a piezo pickup. One of those 
systems where each string has it's own pickup. They get summed right 
before the internal preamp, so tapping each individual string is easy 
and the crosstalk is neglible. The only kind of string crosstalk I get 
is through body vibration. Drawback I see is, that I get a lot of 
harmonics since the pickup position is the bridge itself. A position 
where I get more of the fundamental frequency would be better I think.

I hadn't had the chance to listen to the signal of those magnetic 
hex-pickups, How does those perform? I'd expect to get a lot of dirt 
from adjecting strings with this approach.
