My intuition suggests to me that what you did was lower the impedance of
your signal source. Perhaps you could build multiple devices and connect
them in series to get a larger voltage signal? I realize that the
individual signals from the individual "cells" would not be correlated, but
they still might still add up to something more useful than the signal from
a single cell.

I also wonder what would happen if you applied a small, current-limited, dc
voltage across this cell. Perhaps the chemical reaction would modulate the
flow of the direct current through the cell, and result in a larger AC
voltage than what the cell would generate without an external DC bias?
