You will not experience any problems with banana jacks being 
unshielded.  And my personal preference, believe it or not, is 1/4 inch 
phone jacks, but for a different reason.  I would, if I were you, go full 
speed ahead.  I personally think you are changing out the 1/8" jacks for a 
good reason.  Although, there are people here who have good luck with them.
