Hello and welcome Charles!
A long time ago I've used mini phone jacks - and then... I went bananas!
I've never had any noise/ground problems with banana plugs.
With the high signal levels used in most modulars, noise pickup should
be negligable.
As long as all of your modules share a solid common ground, banana
plugs/jacks should work fine.
If you are retrofitting existing gear that uses mini jacks, you'll need
to be aware of any jacks that are normalized (have switches in them) and
work around that some how. If anything is connected to ground by way of
the jacks, make sure that these are reconnected to ground elsewhere.
Hopefully, you're not living next door to some 100 kilowatt radio
station :-)
