That's what MIDI controllers are for, Scott. All the knobs and faders you
could ask for!

Better still would be to use motorized faders. :-)

Don't like the physical layout of the available controllers? Then take the
DIY route with a Doepfer controller and your own pots in your own case.

Softsynths don't have to be lacking in knobs.
