Toaster SMT soldering does work, I've done it on one project.
You don't necessarily need a stencil, you can get paste in a syringe and
apply it manually. That's what I did. I got one of those magnifying desk
lamps so I could see what I was doing. You generally have to do a bit of
cleanup on fine-pitch devices to deal with shorts or open pins, but other
than that it's a fairly fast process.
