IN my mind, the SSM2164 is da most versatile chip in the world!!!
all right, calm now...
Or maybe CA3080.
Here's why:
In polysynth I used 47 CA3080: for VCF, VC-EG, VC-mixer, and pot replacement. It can be used also for S&H
In modular I used SSM2164 for VCO, VC-EG, VCF, it can be used obviously for VCA, VC-delay, mixers etc.
So maybe not a chip, but OTA in general.
OTOH the most used analog IC is IMHO an opamp. Generic type. You can do almost everything with it adding some minor stuff (like matched pairs that can cost 50 times more than the opamp ;-) )
BTW, I've never used LM3900.
