How about one real knob (only the knob, not the pot) you can hold
against the screen where the virtual knob is and twist it there? The
"touch" screen has to sense the position and angle of that knob.
Perhaps the angle of a little magnet inside the knob could be sensed.
You could even do a multi-turn thing this way. Hold the knob against
the screen, turn it clock-wise as far as you can, lift it, turn it back
(the screen wouldn't sense this), hold it against the screen again and
turn further and so on.
