That's why people are now coupling sampling and impulse response
technology. That gets the electronic instrument much closer to the sound of
the original.
It's a little bit unfair to blame the sampler for things such as a lack of
room resonance. If you play a pipe organ in an anechoic chamber (the
equivalent environment to what the sampler "plays into") it will also sound
terrible. :)
