No need to like it but what he did was certainly creative -- as opposed
to today's sampling which is mostly used to just sample entire lines
from older songs and put some tachycardic bassdrum and the inevitable
"ah yeah!" hooklines on top.

Then Gigasampler certainly is your friend. Individual samples for each
key and 127 velocity steps per key -- times 4 for all usual pedal
combinations.
