How about dividing instruments into those that are "organic" and those that
are "nonorganic"? Organic instruments create sound primarily by using
organic (animal or plant) materials, while nonorganic instruments create
sound primarily without using organic materials; or where the organic
materials, if any, used in the instrument are not integral to sound
production.

Of course, there is always "plugged" and "unplugged"!
