[sdiy] 3 conductor cord and stereo jacks as patch cords

I have a bunch of 3 conductor ( two wires and a braided shield ) microphone cords I what to cut up for patch cords. What is the proper way to solder these to a mono jack ? Are there any drawbacks to using this type of cable ?
How about stereo 1/4" plugs ? What's the proper way to connect the normal 2 wire cable ( wire and braided shield ) cable to a stereo plug? Drawbacks ? Kinda the opposite of the first question.
