I don't know the 8051 much, but I bet the AVRs have more memory, and more
features (UARTs, Interupts, PWM, etc).

depends on how you're doing it.
If you controlling external analogue sources you'll need a 3280..
If its all internal to the AVR the just use a multiply command

output = signal * level

easy.
