i would say just build a midi keyboard into the chassis of the whole
project, that way, if you ever want to say, record what you are playing to
midi, you can just use the same keyboard you are used to. you can do the
velocity, and aftertouch and pitchbend with a non midi CV keyboard if you
can find designs to do so, but it would probably save a lot of time with
midi. [its also generally a lot easier to do those things digitally too].

if you cant find any effects modules with PCBs or designs you like, you
could always transplant the guts from an already available one into the
synth. for a while i had the guts from an A.R.T. FX-1 multi-effects box in a
wooden case i made.
