Check out the PAiA FatMan kit.  It's a MIDI triggered analog monosynth.  It's
very modifiable, can even be converted to a modular.

for some interesting details.  There is a "Pros and Cons" page that will answer
most of your initial questions.  I have posted all of my own mods as well as
those of several others there.  It's a great beginner's project in that you
will have a complete usable synth at the end (most people complete it in less
than 20 hours, I built 2 of them, each in about 12 hours), it's very affordable
(see http://www.paia.com/ for details), has a good "how it works" section in
the manual, and I as well as others here are capable and willing to help you
with any problems you might encounter.
