Yes, you can do that.  Some folks like to tie a bias resistor to the center
point of the cap (the negative leads) and run that to the negative supply
voltage. This will keep the caps happy and polarized... but might introduce
noise.

You need twice the capacitance for the seires connection.

I prefer REAL bipolar capacitors
